PARSNIPS !!


I wish  this was a "scratch and sniff" computer so you could actually smell how wonderful these freshly dug parsnips smell!

First ones of the season.

I finally saw a little green coming up through the garden soil and went and got my shovel.



There are plenty more where these came from. 

I am going to cook these up with a little butter and some water in a frying pan for lunch.

Yummy yummy.



Got any favorite recipes for parsnips?

We made parsnip bread last year and it was delicious!

  1. as soon as i saw these i swear i could smell them. i like them roasted and then served with butter and salt and pepper. i also like them mashed.

    Soup, curried or plain
    In a gratin
    mashed with butter and pepper
    baked until sticky and gooey and yum

    We lifted all ours last week and now have lots in the freezer

  3. I look forward to finding our parsnips as soon as the snow stops coming down. I remember seeing a recipe for parsnip bread but can't remember where. Feel like posting it?

  4. Curried parsnip soup ... parsnip chips (I'm from the UK - don't know what you'd call them!) ... roast parsnips.

  5. I like to include Parsnips in a pan of roasted root veggies. I also like to include them in stew or potroast.

  7. I roast ours, just stir them in a little olive oil and roast at 350 until browning. I also dehydrated some and put those in soups.

    I can't leave mine over the winter, as mice will eat them. So they are harvested after some good frosts.

  13. Apparently parsnips are not a southern thing, at least not the part of the south I'm from. I'd heard of parsnips but never ate them until this year-I bought some at the grocery store and made roasted parsnips, carrots, and potatoes in the oven, and they were delicious! I'm looking forward to trying to grow some in our fall garden this year!
